About the Recipe

Ingredients

  • 1 Cup Juice/ Sauce/ Liqueur

  • 1 Tbsp agar agar


Oil

  • 1 long container for any cooking oil. I prefer sunflower oil

  • Pot

  • Wooden spoon

  • Dropper

  • Long glass container for oil

  • Fridge or Freezer

Preparation

Step 1

Place your cooking oil in the freezer for 10-15 minutes (do not let it freeze, just make it very cold).

Step 2

Add agar agar and sauce together in a pot.

Step 3

Slowly heat your mixture to a boil. Yes, like really slowly, okay!

Step 4

Stir constantly until your agar agar and sauce are combined.

Step 5

Let your mixture cool slightly, but it should still be warm.

Step 6

Use a dropper and slowly drip your sauce into the cold oil. Work as quickly as possible before your oil warms up again.

Step 7

Strain your cooking caviar out and keep the oil for any other recipe. Place in a light-protected container and store in the refrigerator. Use within 3 weeks.
